3 Great Slow Cooker Recipes

Once you have completed your ultimate kitchen remodel there is a world of cooking to explore and take pleasure in. But, there’s not always time in the day to make a delicious meal from scratch and any short cut can be a god-send.

Never fear, for those without the time to spend watching the cooking pot there is a magical kitchen appliance known as a slow cooker! You can put a number of ingredients into this pot, cook them for several hours without much supervision and enjoy a meal that tastes as good as if you have slaved over the stove for several hours instead. Here are a few top recipes to try out in your slow cooker.

Vegetable Korma

For the vegetarians out there, this is the recipe with the most ingredients and the most time investment in prep, but all good curries do. Firstly, cook the onion with the dried spices on a low heat until the onions are golden and then add the chill, garlic and ginger for a further minute. Add the rest of the vegetables and cook five minutes.

At this point add it to the slow cooker with the stock and peas. Cook this mixture for about two hours on a low heat. Before serving, stir in the yoghurt to get that creamy texture that makes the curry, then simply spoon over a rice or accompaniment of your choice.

Ingredients:

  • 1 onion, chopped thinly
  • 3 cardamom pods
  • 2tsp ground cumin and coriander
  • ½ tsp turmeric
  • 1 green chilli, finely chopped and deseeded if necessary
  • 1 crushed garlic clove
  • Piece of ginger
  • 800g mixed vegetables chopped chunkily of your choice (such as carrots, potato, courgette)
  • 300ml vegetable stock
  • 200g frozen peas
  • 200ml yoghurt

Irish Stew

This is a simple, but delicious, traditional Irish recipe that is a perfect warm-up and comfort food. The method is pretty simple: start by sizzling the bacon until crisp and browning the chunks of lamb. Transfer this mixture into the slow cooker and add the rest of the ingredients, cover with the stock and then simmer for seven hours on a low heat.

After several hours you should add the pearl barley and leek, then turn up the slow cooker to high and let this cook for a further hour. After this, season to taste and serve your delicious stew in a large bowl.

Ingredients:

  • 200g streaky bacon
  • 900g stewing lamb
  • Small bunch of thyme
  • 3 onions, thick slices
  • 5 carrots, cut chunky
  • 6 potatoes, cut into big chunks
  • 700ml stock
  • 3 bay leaves
  • 85g pearl barley
  • 1 leek, cut chunky

Creamy Chicken and Vegetables

To start off this simple recipe for two, just brown off the chicken in a pan and throw these into the slow cooker with the potatoes, cover with the stock and cook in the slow cooker for three hours on low.

After a few hours turn up the heat of the slow cooker and add the mixed vegetables. Cook this for a further 15-30 minutes depending on the mix of vegetables that you have used, once they are tender you should stir in the crème fraiche and tarragon. Don’t forget to season with salt and pepper before serving on a bed of salad.

Ingredients:

  • 2 chicken breasts
  • 200g new potato, sliced thinly
  • 500ml chicken stock
  • 200g mixed vegetables (peas, broccoli, broad beans)
  • 2 tsp crème fraîche
  • Roughly chopped tarragon leaves
